community/stunnel: enable SO_ORIGINAL_DST and fix tests
Apparently the support for SO_ORIGINAL_DST is silently disabled if the
linux-headers are missing so make sure to add linux-headers to
makedepends
The test suite contains bundled certificates that has expired. Update
the certs.
